White Chocolate Pumpkin Oats
In a saucepan:
1/2 cup rolled oats
1 tbsp. chia seeds
1 cup water
Bring to a boil and stir until liquid is absorbed.
Then add 1/4 cup liquid egg whites, stir another min or so.
Add 2 tbsp. pumpkin puree and a few white chocolate chips.
Sweet Potato & Pb Stuffed French Toast
Simply add 1/2 small sweet potato, cooked & mashed on one side of your cooked French toast and peanut butter on the other, sandwich together & drizzle with maple syrup.
Chicken Alfredo Pizza
For my basic crust recipe click here Bake the crust then top with cashew cream alfredo:
1 cup cashews soaked at least 3 hrs to overnight, then blend with about half the water, add 2 garlic cloves, 1/4 cup nutritional yeast & a pinch of sea salt. Set cooked chicken slices & broccoli florets on top with a little mozzarella & parmesan then bake another 5 min or until cheese is melted.
I made popcorn balls with my grandma the other day. She makes em every year for Halloween and everyone loves em! They are not healthy by any means. I wish I could think of a way to make em healthier but I don’t think they would stick together. If you have any ideas let me know. Otherwise it’s Halloween and I’m not on a diet so I’m enjoying one or two this year!
